Vanilla Maple Pecan Granola
This easy, tasty granola recipe is great on top of yogurt, smoothie bowls, or a substitute for cereal. It can be made gluten free, dairy free, and vegan. This recipe is packed full of nutrients and a great pantry staple for quick breakfasts. It's easy to throw together and the recipe is so flexible, allowing for ingredient swaps based on whatever you've got on hand. If stored in an airtight container, it will last weeks!
Ingredients
- 3 C. Steel cut oats or quick rolled oats
- 1/2 - 1 C. Pecans
- 1/4 C. Melted Coconut Oil
- 1/4 C. Maple Syrup
- 1 tsp Vanilla Extract
- 1/4 tsp Salt
- 1/2 C. Sunflower seeds (optional)
- 3 tbsp Chia seeds (optional)
Instructions
- Preheat the oven to 350 degrees.
- Line a baking sheet with parchment paper or a baking mat.
- Mix ingredients and spread evenly across the baking sheet.
- Bake for about 30 minutes, stirring every 10 minutes.
- Remove from the oven when it's starts to crisp, and let cool.
- Store in an enclosed container.
